My love for instagramming (is that even a word) everything I cook and make has convinced my friends to cook dinner with me. So one of my friends, Jessica, suggested that we make pesto pasta. I’ve never done it before, but it turned out so well and I’m so happy! It’s so simple, yet delicious and healthy.
- 8-10 Asparagus, cut in small pieces with stems cut off
- 3 Cloves Garlic, pressed
- 2/3 cup Parmesan Cheese
- 1 cup olive oil
- Pinch of Black Pepper
- 1/2 teaspoon salt
- 1/4 cup of Pine Nuts
- Assorted Herbs and Spices (I used Italian Seasoning, Herbs de Provence, Greek Seasoning, Old Bay)
- Rotini Pasta
boil pasta until al dente, drain and set aside
blend asparagus, garlic, cheese, olive oil, black pepper, salt and pine nuts until well blended and you have pesto! It’s that simple! The pesto sauce should be a nice green color.
sauté shrimp and add your choice of seasonings and herbs. I used Italian Seasoning, Herbs de Provence, Greek Seasoning, Old Bay.
heat pasta in a medium pan and add in pesto sauce. cook for an additional five minutes and then set aside.
garnish with shrimp, parmesan cheese, pine nuts and any herbs you want. enjoy!
For dessert, I made a cheesecake pudding, with bananas, chocolate ganache and a pirouette. So good!
